Chewy Snickerdoodle Cookie Bars are a delightful twist on the classic snickerdoodle cookie, soft and chewy with warm cinnamon sugar flavors.

- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1/4 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- In another bowl, whisk together the flour, baking powder, baking soda, cream of tartar, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Spread the batter evenly into the prepared baking dish.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before cutting into bars and serving.
Notes
For added flavor, sprinkle extra cinnamon and sugar on top before baking. Store leftovers in an airtight container for up to 4 days.
