- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 6 tbsp unsalted butter, melted
- 1 pint cherry ice cream, softened
- 1 cup fresh cherries, pitted and halved
- 1/2 cup mini chocolate chips
- 1/2 cup whipped cream
- 1/4 cup chocolate sauce
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter until well mixed.
- Press the mixture into the bottom and sides of a 9-inch pie pan. Bake for 8-10 minutes until lightly golden, then let it cool completely.
- In another bowl, gently fold the softened cherry ice cream with the fresh cherries and mini chocolate chips. Spread this mixture into the cooled crust.
- Freeze for at least 4 hours or until the ice cream is firm.
- Just before serving, add whipped cream on top, garnish with fresh cherries, sprinkle more mini chocolate chips, and drizzle with chocolate sauce.
Notes
Ensure ice cream is softened for easier mixing. Don’t skip the cooling time for the crust to help the cake hold together better.
