Description

A delightful dessert combining creamy cheesecake with a crunchy Oreo base and a sweet cherry topping, perfect for any occasion.


Ingredients

  • 2 1/2 cups Oreo crumbs (keep the filling)
  • 4 tbsp unsalted butter, melted
  • 1 lb fresh or frozen pitted cherries
  • 1/2 cup white granulated sugar
  • 2 tbsp cornstarch
  • 24 oz cream cheese, room temperature
  • 3/4 cup white granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1/4 cup pureed cherry filling
  • 1 tsp pure vanilla extract
  • 4 large eggs, room temperature

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with nonstick spray and line the bottom with parchment paper.
  2. Process the Oreos into crumbs and mix with melted butter. Press the mixture into the pan and bake for 12 minutes. Let it cool.
  3. In a saucepan, combine the cherries, 1/2 cup sugar, and cornstarch. Cook over medium heat until the juice is released. Mash half of the cherries and continue to thicken the mixture. Blend half a cup of this mixture for a cherry puree and cool it in the freezer. Store the remaining topping in the fridge.
  4. In a mixing bowl, beat the cream cheese and 3/4 cup sugar until smooth. Add the sour cream, cherry puree, and vanilla extract. Mix in the eggs one at a time until well combined. Pour the cheesecake batter into the cooled crust.
  5. For the water bath, place the pan inside another larger cake pan or wrap it in foil, then place it in a roasting pan filled with water. Bake for 70-80 minutes. Let the cheesecake cool in the oven before moving to a cooling rack. Refrigerate for at least 6 hours.
  6. Serve with the chilled cherry topping.

Notes

Serve chilled and can be topped with whipped cream or chocolate shavings. Store leftovers covered in the fridge for 3-5 days or freeze for up to 2 months.
