- 2 large chicken breasts, halved horizontally
- Salt & pepper, to taste
- 1/2 tsp garlic powder
- 1 tbsp olive oil
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/3 cup heavy cream
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt, pepper, and garlic powder.
- In a large skillet, heat the olive oil and sear the chicken for 4–5 minutes on each side until golden. Set the chicken aside.
- In the same skillet, melt the butter. Add the sliced mushrooms and cook until browned; then stir in the minced garlic.
- Pour in the chicken broth and let it simmer for 2–3 minutes. Add the heavy cream and stir until the sauce slightly thickens.
- Return the chicken to the skillet and spoon the mushrooms and sauce over the chicken. Sprinkle with shredded mozzarella cheese.
- Cover the skillet and cook on low heat until the cheese is melted, about 3–5 minutes. Garnish with chopped parsley and serve hot.
Notes
For extra flavor, add herbs like thyme or rosemary when cooking the mushrooms. For a little heat, try adding red pepper flakes to the sauce. Make sure not to overcook the chicken; it should be juicy and tender.
