Creamy and cheesy scalloped potatoes made with layers of Yukon gold potatoes and a rich cheese sauce, perfect for a comforting side dish.

- 2 lbs Yukon gold potatoes, thinly sliced
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup shredded Gruyère cheese (optional)
- Fresh thyme sprigs (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish.
- In a medium saucepan, melt the butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Whisk in the flour and cook for 1 minute to form a roux.
- Gradually whisk in the milk and cream. Bring to a gentle simmer, stirring until the sauce thickens, about 3–5 minutes.
- Stir in salt, pepper, cheddar, and Gruyère cheese until melted and smooth, then remove from heat.
- Layer half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over the potatoes.
- Repeat with remaining potatoes and pour over the rest of the cheese sauce.
- Cover with foil and bake for 40 minutes. Remove foil and bake for another 20–25 minutes until golden and bubbly.
- Let rest for 10 minutes before serving. Garnish with fresh thyme.
Notes
For extra flavor, consider adding cooked bacon or sautéed onions between the layers of potatoes.
