Description

Creamy and cheesy scalloped potatoes made with layers of Yukon gold potatoes and a rich cheese sauce, perfect for a comforting side dish.


Ingredients

  • 2 lbs Yukon gold potatoes, thinly sliced
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Gruyère cheese (optional)
  • Fresh thyme sprigs (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish.
  2. In a medium saucepan, melt the butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  3. Whisk in the flour and cook for 1 minute to form a roux.
  4. Gradually whisk in the milk and cream. Bring to a gentle simmer, stirring until the sauce thickens, about 3–5 minutes.
  5. Stir in salt, pepper, cheddar, and Gruyère cheese until melted and smooth, then remove from heat.
  6. Layer half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over the potatoes.
  7. Repeat with remaining potatoes and pour over the rest of the cheese sauce.
  8. Cover with foil and bake for 40 minutes. Remove foil and bake for another 20–25 minutes until golden and bubbly.
  9. Let rest for 10 minutes before serving. Garnish with fresh thyme.

Notes

For extra flavor, consider adding cooked bacon or sautéed onions between the layers of potatoes.
