Instructions
- Make the Crust: Melt the butter and mix it with graham cracker crumbs and sugar until well combined. Press the mixture into the bottom and halfway up the sides of a 10-inch springform pan.
- Prepare the Cheesecake Filling: Beat the softened cream cheese until smooth and creamy. Gradually add the sugar and beat until well combined. Add the eggs one at a time, then mix in the vanilla extract, lemon juice, cornstarch, and sour cream.
- Assemble the Cheesecake: Pour the cheesecake mixture into the prepared crust and smooth the top with a spatula.
- Bake: Preheat the oven to 350°F (175°C) and bake the cheesecake for 60 minutes, or until the center is set and the top is lightly browned.
- Make the Blueberry Topping: In a saucepan, combine blueberries, water, lemon juice, and sugar. Heat until it boils. In a separate bowl, mix cornstarch and cold water, then gradually stir it into the blueberry mixture. Cook and stir until thickened, about 2 minutes.
- Cool and Assemble: Let the cheesecake and blueberry topping cool completely. Once cooled, pour the blueberry topping over the cheesecake and spread evenly.
- Chill and Serve: Refrigerate the cheesecake overnight for the best texture. Slice, serve, and enjoy!
