BLT Egg Salad Lettuce Wraps

Description

A delicious and healthy twist on a classic favorite, combining egg salad with crispy bacon and fresh lettuce.


Ingredients

  • 6 hard-boiled eggs, chopped
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • Salt & black pepper, to taste
  • 810 romaine lettuce leaves
  • 1/2 cup cherry tomatoes, halved
  • 4 slices bacon, cooked crisp and crumbled
  • Freshly cracked black pepper, for garnish

Instructions

  1. In a bowl, combine chopped eggs, mayo, mustard, salt, and pepper. Mix until creamy.
  2. Spoon egg salad into each romaine leaf. Top with cherry tomato halves and bacon crumbles.
  3. Finish with a sprinkle of freshly cracked black pepper. Serve immediately.

Notes

These wraps are best enjoyed fresh. Store egg salad separately to prevent lettuce from becoming soggy.
