Description

Delightful cinnamon rolls infused with rich Biscoff cookie butter, perfect for breakfast or a sweet snack.


Ingredients

  • 3 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 tsp active dry yeast
  • 1/2 cup warm milk (110°F/45°C)
  • 1/4 cup unsalted butter, melted
  • 1/4 cup water
  • 1 large egg
  • 1/2 tsp salt
  • 1/2 cup Biscoff cookie butter, softened
  • 1/2 cup brown sugar, packed
  • 2 tsp ground cinnamon
  • 2 tbsp unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1/4 cup Biscoff cookie butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp milk

Instructions

  1. In a small bowl, mix the warm milk, yeast, and a pinch of sugar. Let sit for 5 minutes until frothy.
  2. In a large bowl, combine flour, sugar, and salt. Add the yeast mixture, melted butter, water, and egg. Mix until a soft dough forms.
  3. Knead the dough for 5-7 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled in size.
  4. In a separate bowl, mix Biscoff cookie butter, butter, brown sugar, and cinnamon until smooth for the filling.
  5. Roll out the dough into a 12×18-inch rectangle and spread the filling evenly over it.
  6. Roll up from the long side and cut into 12 slices. Place in a greased 9×13-inch baking dish.
  7. Let the rolls rise for 30 minutes. Preheat the oven to 350°F (175°C) and bake for 20-25 minutes until golden brown.
  8. For the icing, beat cream cheese, Biscoff cookie butter, powdered sugar, and vanilla until smooth. Gradually add milk until spreadable.
  9. Drizzle icing generously over the warm cinnamon rolls and serve.

Notes

Store leftover rolls in an airtight container in the refrigerator for up to 4 days. Reheat in microwave or oven.
