A delightful blend of creamy cheesecake and the classic flavors of Bananas Foster, with a crunchy vanilla wafer crust and caramelized banana topping.


Ingredients

  • 2 1/4 cups (302g) vanilla wafer crumbs
  • 1/2 cup (112g) salted butter, melted
  • 5 tbsp (45g) light brown sugar, loosely packed
  • 1 tsp ground cinnamon
  • 24 ounces (678g) cream cheese, room temperature
  • 1 cup (144g) brown sugar, loosely packed
  • 3 tbsp (24g) all-purpose flour
  • 1 cup (240ml) mashed ripe bananas (23 bananas)
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp (30ml) dark rum
  • 3 large eggs, room temperature
  • 1/4 cup (56g) salted butter
  • 1/2 cup (113g) light brown sugar, packed
  • 1/8 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1 tbsp (15ml) heavy whipping cream
  • 2 tbsp (30ml) dark rum
  • 2 medium bananas, sliced into coins
  • 1/2 cup (120ml) heavy whipping cream, cold
  • 1/4 cup (29g) powdered sugar
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Mix vanilla wafer crumbs, melted butter, brown sugar, and cinnamon. Press mixture into the pan and bake for 10 minutes. Let cool.
  3. Lower oven temperature to 300°F (148°C). Blend cream cheese, brown sugar, and flour until smooth. Add mashed bananas, cinnamon, nutmeg, and dark rum. Mix in eggs one at a time.
  4. Pour mixture into the cooled crust and bake in a water bath for 1 hour. Let cool gradually in the oven for 1 hour and then refrigerate for 6-7 hours.
  5. In a pan, melt butter. Add brown sugar, nutmeg, cinnamon, and heavy cream, stirring until sugar dissolves. Carefully add rum and swirl until flames burn out. Add sliced bananas and cook for 1-2 minutes. Let sauce cool.
  6. Whip heavy cream with powdered sugar and cinnamon until stiff peaks form.
  7. Remove cheesecake from the pan. Pipe whipped cream around the edges and spoon the bananas foster topping over the center. Refrigerate until ready to serve.

Notes

Use ripe bananas for better flavor. Let cream cheese come to room temperature before mixing for a smoother filling.
