- 1 1/2 cups (150g) gluten-free graham cracker crumbs
- 1/4 cup (50g) firmly packed light brown sugar
- 6 tablespoons (85g) unsalted butter, melted
- 16 oz. cream cheese, brought to room temperature
- 14 oz. sweetened condensed milk
- 1/2 cup (113g) sour cream, at room temperature
- 1/2 teaspoon vanilla extract
- 1 cup (227g) mashed bananas
Instructions
- Preheat the oven to 300°F (150°C) and line an 8-inch square baking dish with parchment paper.
- In a bowl, mix graham cracker crumbs, brown sugar, and melted butter. Press this mixture into the bottom of the baking dish and refrigerate.
- Beat the cream cheese until smooth, then add sweetened condensed milk, sour cream, and vanilla extract. Mix well. Stir in the mashed bananas.
- Pour the filling over the crust and bake for 40 minutes or until it is firm and lightly golden.
- Cool completely, then refrigerate for at least 4 hours to set.
- Lift out of the pan, slice into squares, and serve chilled.
Notes
Serve chilled, optionally topped with whipped cream and banana slices.
