A delightful dessert that combines the creamy richness of cheesecake with the classic flavors of banana pudding.


Ingredients

  • 1 1/2 cups (150g) gluten-free graham cracker crumbs
  • 1/4 cup (50g) firmly packed light brown sugar
  • 6 tablespoons (85g) unsalted butter, melted
  • 16 oz. cream cheese, brought to room temperature
  • 14 oz. sweetened condensed milk
  • 1/2 cup (113g) sour cream, at room temperature
  • 1/2 teaspoon vanilla extract
  • 1 cup (227g) mashed bananas

Instructions

  1. Preheat the oven to 300°F (150°C) and line an 8-inch square baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, brown sugar, and melted butter. Press this mixture into the bottom of the baking dish and refrigerate.
  3. Beat the cream cheese until smooth, then add sweetened condensed milk, sour cream, and vanilla extract. Mix well. Stir in the mashed bananas.
  4. Pour the filling over the crust and bake for 40 minutes or until it is firm and lightly golden.
  5. Cool completely, then refrigerate for at least 4 hours to set.
  6. Lift out of the pan, slice into squares, and serve chilled.

Notes

Serve chilled, optionally topped with whipped cream and banana slices.
