- 3 medium zucchinis, sliced lengthwise into 1⁄4-inch thick strips
- 1 tbsp olive oil
- Salt & pepper, to taste
- 1 cup ricotta cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Brush the zucchini slices with olive oil and season with salt and pepper.
- Place the zucchini slices on a baking sheet and bake for 15-20 minutes until slightly tender.
- Remove from the oven and spread a dollop of ricotta cheese on each slice.
- Top with marinara sauce and shredded mozzarella cheese.
- Return to the oven and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Garnish with fresh basil before serving.
Notes
Make sure to slice the zucchini evenly for even cooking. Add your favorite herbs or spices to the ricotta for extra flavor.
