- 2 medium zucchinis, grated and squeezed dry
- 2 large eggs
- 1/3 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
Instructions
- In a large bowl, combine the grated zucchini, eggs, Parmesan cheese, and flour. Mix until well combined.
- Heat a skillet over medium heat and add oil.
- Drop spoonfuls of the mixture into the skillet, flattening them slightly.
- Cook until golden brown on both sides, about 3-4 minutes per side.
- Remove and drain on paper towels.
- Serve warm with a sprinkle of cheese on top.
Notes
Be sure to squeeze out as much moisture as possible from the grated zucchini for crispy fritters. You can also add garlic powder or onion powder for extra flavor.
