- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- 3/4 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup fresh orange juice
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- 1 1/2 cups grated zucchini (moisture lightly squeezed out)
- Optional: 1/2 cup chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, beat the eggs with sugar until light and frothy. Add the oil, orange juice, orange zest, and vanilla extract. Stir until smooth.
- Fold in the grated zucchini and mix until evenly distributed.
- Gradually add the dry ingredients into the wet mixture and stir just until combined. Avoid over-mixing.
- If using nuts, fold them in now.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Optionally, drizzle with a light orange glaze made with powdered sugar and orange juice once cooled.
Notes
Squeeze out excess moisture from the grated zucchini to avoid a soggy bread. Adjust sugar based on taste preference.
