Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated zucchini (moisture lightly squeezed out)
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat the eggs with sugar until light and frothy. Add the oil, orange juice, orange zest, and vanilla extract. Stir until smooth.
  4. Fold in the grated zucchini and mix until evenly distributed.
  5. Gradually add the dry ingredients into the wet mixture and stir just until combined. Avoid over-mixing.
  6. If using nuts, fold them in now.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Optionally, drizzle with a light orange glaze made with powdered sugar and orange juice once cooled.

Notes

Squeeze out excess moisture from the grated zucchini to avoid a soggy bread. Adjust sugar based on taste preference.
