Description

Crispy on the outside and soft on the inside, these fritters make a delightful snack or meal addition paired with refreshing garlic tzatziki.


Ingredients

  • 1 cup grated zucchini
  • 1/2 cup crumbled feta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • Oil for frying
  • 1 1/2 cups Greek yogurt
  • 4 cloves garlic, minced
  • 1 small cucumber, peeled and chopped
  • 2 teaspoons olive oil
  • Juice of 1/2 lemon

Instructions

  1. In a bowl, combine grated zucchini, feta cheese, chopped spinach, flour, eggs, salt, and pepper. Mix well to form a batter.
  2. Heat oil in a skillet over medium heat. Drop spoonfuls of the batter into the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
  3. For the tzatziki, mix Greek yogurt, minced garlic, chopped cucumber, olive oil, and lemon juice in a bowl.
  4. Serve the fritters warm with the garlic tzatziki on the side.

Notes

Squeeze out excess water from the grated zucchini to prevent the batter from being too wet. Adjust seasoning to taste.
