Delicious and easy-to-make zucchini corn fritters, perfect for snacking or as a side dish.
Ingredients
Scale
- 1 cup shredded zucchini (squeezed dry)
- 1 cup corn kernels (fresh or frozen)
- 2 eggs
- 1/3 cup flour
- 1/4 cup grated parmesan
- 2 green onions, sliced
- Salt & pepper, to taste
- Oil for frying
- For the Dip:
- 1/2 cup sour cream or Greek yogurt
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped green onion
- Salt & a few corn kernels for garnish
Instructions
- Mix all fritter ingredients in a bowl.
- Heat oil in a skillet and spoon the batter into rounds.
- Cook for 2–3 minutes per side until golden and crisp.
- Mix dip ingredients in a bowl and serve it with warm fritters!
Notes
Squeeze the zucchini well to remove excess moisture. Adjust the seasoning according to your taste.
