Crispy on the outside and tender on the inside, these Zucchini Corn Fritters are a delicious way to enjoy fresh vegetables.

- 2 medium zucchinis, grated
- 1/2 teaspoon salt (for draining zucchini)
- 1 cup fresh or frozen corn kernels (thawed if frozen)
- 1/4 cup chopped green onions
- 1/2 cup shredded cheddar cheese (optional)
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 teaspoon baking powder
- Salt and pepper to taste
- 2–3 tablespoons olive oil (for frying)
- Sour cream or ranch dressing, for dipping
- Extra chopped green onions for garnish
Instructions
- Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess liquid using a clean towel or cheesecloth.
- In a large bowl, combine drained zucchini, corn, green onions, cheddar (if using), eggs, flour, baking powder, salt, and pepper. Mix until well combined.
- Heat olive oil in a large skillet over medium heat.
- Scoop 2 tablespoons of batter per fritter into the skillet, gently flattening each one.
- Cook for 3–4 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate.
- Serve warm with sour cream or ranch, and garnish with extra green onions.
Notes
Squeeze out as much liquid as possible from the zucchini to avoid soggy fritters. Feel free to add herbs or spices like garlic powder or paprika for added flavor.
