Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together the grated zucchini, applesauce, sugar, oil, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with plant-based milk, stirring until just combined.
  5. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes
