- 3 medium zucchinis, thinly sliced
- 1 cup shredded cheddar cheese
- 1/2 cup grated parmesan cheese
- 1 cup sour cream or Greek yogurt
- 2 eggs
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the sour cream (or Greek yogurt), eggs, and season with salt and pepper.
- In a greased casserole dish, layer the sliced zucchinis, then sprinkle cheddar and parmesan cheeses on top.
- Pour the egg mixture evenly over the layers.
- Repeat the layers until all ingredients are used, finishing with cheese on top.
- Bake for about 30-35 minutes or until the casserole is set and golden on top.
- Serve warm.
Notes
For extra flavor, consider adding chopped onions or garlic to the layers. You can add breadcrumbs on top for a crunchy texture.
