Ingredients

  • 50g Carrot
  • 1 Zucchini
  • 50g Small onion
  • 1 Egg
  • 100ml Milk
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 100g Flour (2/3 cup)
  • Cheddar cheese, grated

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Grate the carrot and zucchini.
  3. In a mixing bowl, combine the grated carrot, zucchini, finely chopped onion, egg, milk, salt, and black pepper.
  4. Gradually add the flour and mix until well combined.
  5. Pour the batter into a greased baking dish.
  6. Top with grated cheddar cheese.
  7. Bake in the preheated oven for about 25-30 minutes, or until golden brown and set.
  8. Let it cool for a few minutes before serving. Enjoy!

Notes

Squeeze out excess moisture from the grated zucchini to avoid a soggy bake. You can use other types of cheese or add herbs and spices for extra flavor.
