Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 2 large eggs
  • 1/3 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the sugar and eggs until smooth.
  4. Add the lemon juice, lemon zest, vegetable oil, yogurt, and vanilla extract to the egg mixture. Mix well.
  5. Gradually combine the wet and dry ingredients until just blended.
  6. Pour the batter into the prepared loaf pan.
  7. Bake in the oven for 50-60 minutes, or until a toothpick comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Serve with a sprinkle of powdered sugar, or a dollop of whipped cream and fresh berries. Store in an airtight container at room temperature for up to 3 days.
