Ingredients

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 2 large eggs
  • 1/3 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat sugar and eggs until smooth.
  4. Add lemon juice, lemon zest, oil, yogurt, and vanilla extract to the egg mixture and mix well.
  5. Gradually combine wet and dry ingredients until just blended.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For added flavor, serve with powdered sugar or lemon glaze. Store wrapped at room temperature for up to 4 days.
