Ingredients

- 1 grilled chicken breast, seasoned and sliced
- 1 lemon slice (for garnish or grilling)
- 2 cups chopped iceberg or romaine lettuce
- 1/3 cup diced tomatoes
- 1/2 cup cucumber, diced
- 1/2 avocado, sliced
- Handful of fresh cilantro
- Salt, pepper, garlic powder, oregano to season
- Optional: olive oil or balsamic glaze drizzle
Instructions
- Season chicken with garlic powder, oregano, salt, and pepper. Grill until golden and juicy.
- Once the chicken is grilled, slice it up and top it with a thin lemon slice.
- Fill your bowl with crisp lettuce, then layer in diced tomatoes, cucumbers, avocado, and fresh cilantro.
- Place sliced chicken over the greens. Add the lemon on top and season lightly with black pepper or a drizzle of olive oil.
- Serve chilled or slightly warm.
Notes
For extra flavor, marinate the chicken in lemon juice and herbs. This salad can also be made vegan by replacing the chicken with grilled tofu or tempeh.
