- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- Zest and juice of 1 lemon
- 1/2 tsp Italian seasoning
- Salt and pepper, to taste
- 1/2 tsp paprika
- 3 tbsp butter, divided
- 3 cloves garlic, minced
- Fresh parsley, chopped, for garnish
- 8 oz linguine
- 2 tbsp butter
- 3/4 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1/2 tsp garlic powder
Instructions
- Start by bringing a large pot of salted water to a boil. Cook the linguine until just al dente, then drain and set it aside.
- In a bowl, combine the chicken with lemon zest, lemon juice, Italian seasoning, paprika, salt, and pepper. Mix well to coat evenly.
- In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the marinated chicken pieces and cook for 5–6 minutes, stirring occasionally, until golden and fully cooked. Remove the chicken from the skillet and set aside.
- Reduce the heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Once melted, stir in the minced garlic and cook for about 1–2 minutes, just until fragrant.
- Pour in the heavy cream and bring it to a gentle simmer. Add garlic powder, a pinch of salt, and black pepper. Let the sauce bubble for a few minutes to thicken slightly.
- Stir in the Parmesan cheese and mix continuously until it melts into a smooth, velvety sauce.
- Toss the cooked linguine into the sauce, ensuring it’s fully coated. Return the chicken to the skillet and gently fold everything together until heated through.
- Finish the dish with a sprinkle of fresh chopped parsley and serve warm.
Notes
For extra flavor, let the chicken marinate for an hour before cooking. Cook the pasta al dente, as it will continue to cook in the sauce.
