Delightful Zesty Lemon Bars with a perfect balance of sweetness and tanginess, easy to make and perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 tablespoons flour
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 1/3 cup lemon juice
  • Zest of 1 lemon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  2. In a bowl, mix 1 cup of flour, powdered sugar, and butter until the mixture becomes crumbly. Press this mixture evenly into the pan.
  3. Bake the crust for 15-20 minutes or until it turns lightly golden.
  4. In another bowl, whisk together granulated sugar, 2 tablespoons of flour, baking powder, eggs, lemon juice, lemon zest, and a pinch of salt.
  5. Pour this lemon mixture over the baked crust and bake for an additional 20-25 minutes.
  6. Allow the bars to cool completely. Once cool, dust the top with powdered sugar and cut into squares.

Notes

Serve chilled or at room temperature, optionally with vanilla ice cream or whipped cream. Store in an airtight container for up to 3 days, or in the refrigerator for up to a week.
