Ingredients

- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 tablespoons flour
- 1/2 teaspoon baking powder
- 2 eggs
- 1/3 cup lemon juice
- Zest of 1 lemon
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
- In a bowl, mix 1 cup flour, powdered sugar, and butter until crumbly. Press into the prepared pan for the crust.
- Bake the crust for 15-20 minutes until lightly golden.
- In another bowl, whisk together granulated sugar, 2 tablespoons flour, baking powder, eggs, lemon juice, lemon zest, and a pinch of salt.
- Pour the lemon mixture over the baked crust and return to the oven. Bake for an additional 20-25 minutes.
- Allow the bars to cool completely. Dust with powdered sugar and cut into squares.
Notes
For best flavor, use fresh lemon juice and zest. Do not overbake the lemon filling.
