Ingredients

  • 1 1/2 cups finely crushed graham crackers
  • 3/4 cup crushed walnuts or pecans
  • 1 tbsp sugar
  • 6 tbsp unsalted butter, melted
  • 3 (8-ounce) packs cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups blueberries
  • 3 tbsp sugar
  • Zest of 1 lemon
  • Juice of half a lemon

Instructions

  1. Prepare the Crust: In a bowl, combine crushed graham crackers, crushed walnuts or pecans, sugar, and melted butter. Stir until the mixture is evenly moistened. Press the crumb mixture into the bottom of a greased 9-inch springform pan. Set aside.
  2. Preheat the Oven: Preheat the oven to 325°F (163°C). In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add eggs one at a time and mix well after each addition, then add vanilla extract. Pour cheesecake batter into the prepared crust.
  3. Bake the Cheesecake: Bake for 50-55 minutes until the edges are browned and the center is set. Cool completely, then refrigerate for at least 4 hours or overnight.
  4. Prepare the Blueberry Sauce: In a saucepan, combine blueberries, sugar, lemon zest, and lemon juice. Simmer for about 10 minutes until thickened. Let cool.
  5. Serve: Once the cheesecake is cooled, add blueberry sauce on top before serving.

Notes

For a smoother texture, beat the cream cheese and sugar well. You can use fresh or frozen blueberries for the sauce.
