- 1 1/2 cups finely crushed graham crackers
- 3/4 cup crushed walnuts or pecans
- 1 tbsp sugar
- 6 tbsp unsalted butter, melted
- 3 (8-ounce) packs cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- 2 1/2 cups blueberries
- 3 tbsp sugar
- Zest of 1 lemon
- Juice of half a lemon
Instructions
- Prepare the Crust: In a bowl, combine crushed graham crackers, crushed walnuts or pecans, sugar, and melted butter. Stir until the mixture is evenly moistened. Press the crumb mixture into the bottom of a greased 9-inch springform pan. Set aside.
- Preheat the Oven: Preheat the oven to 325°F (163°C). In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add eggs one at a time and mix well after each addition, then add vanilla extract. Pour cheesecake batter into the prepared crust.
- Bake the Cheesecake: Bake for 50-55 minutes until the edges are browned and the center is set. Cool completely, then refrigerate for at least 4 hours or overnight.
- Prepare the Blueberry Sauce: In a saucepan, combine blueberries, sugar, lemon zest, and lemon juice. Simmer for about 10 minutes until thickened. Let cool.
- Serve: Once the cheesecake is cooled, add blueberry sauce on top before serving.
Notes
For a smoother texture, beat the cream cheese and sugar well. You can use fresh or frozen blueberries for the sauce.
