- 1 1/2 cups finely crushed graham crackers
- 3/4 cup crushed walnuts or pecans
- 1 tbsp sugar
- 6 tbsp unsalted butter, melted
- 3 (8-ounce) packs cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- 2 1/2 cups blueberries (fresh or frozen)
- 3 tbsp sugar (adjust to taste)
- Zest of 1 lemon
- Juice of half a lemon
Instructions
- Prepare the crust by mixing crushed graham crackers, walnuts or pecans, sugar, and melted butter together. Press this mixture into a greased 9-inch springform pan. Set it aside.
- Preheat the oven to 325°F (163°C).
- In a large bowl, beat the cream cheese and 1 cup of sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Pour the cheesecake mixture into the prepared crust and bake for 50-55 minutes or until the edges are browned and the center is set. Allow it to cool completely, then refrigerate for at least 4 hours.
- For the blueberry sauce, combine blueberries, sugar, lemon zest, and lemon juice in a saucepan. Simmer on medium heat for 10 minutes until thickened. Let it cool before spreading on the cheesecake.
- Serve the cheesecake topped with blueberry sauce, and enjoy!
Notes
Make sure the cream cheese is softened for easy mixing. You can adjust the sugar in the blueberry sauce to suit your taste.
