Description

A festive chocolate cake shaped like a log, perfect for holiday gatherings.


Ingredients

  • 4 large eggs, separated
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 cup water
  • 8 oz semisweet chocolate, chopped
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 2 tbsp cocoa powder
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • Powdered sugar (for dusting)
  • Marzipan mushrooms (optional)
  • Chocolate shavings or curls (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
  2. Beat egg yolks, granulated sugar, brown sugar, and vanilla extract until pale and fluffy.
  3. In a separate bowl, whisk egg whites until soft peaks form.
  4. Sift together flour, salt, and baking powder. Gradually fold the dry ingredients into the egg mixture, followed by the water, until just combined.
  5. Gently fold in the beaten egg whites.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
  8. Once baked, cool the cake slightly, then turn it onto a powdered sugar-dusted towel and roll it up. Allow it to cool completely.
  9. Melt the semisweet chocolate and beat softened butter with powdered sugar and cocoa powder until smooth.
  10. Stir in the melted chocolate, heavy cream, and vanilla extract until fluffy.
  11. Unroll the completely cooled cake and spread a thin layer of chocolate buttercream inside.
  12. Roll the cake back up and place it seam-side down on a platter.
  13. Frost the entire cake with the remaining buttercream, creating a bark-like texture.
  14. Decorate with a fork and dust with powdered sugar. Optionally, add marzipan mushrooms and chocolate shavings.
  15. Refrigerate for at least 1 hour before serving.

Notes

Make sure your eggs are at room temperature for better results. Be gentle when folding in the egg whites to keep the cake light and airy.
