Description

A delightful cheesecake combining creamy flavors with tart blackberries, using Greek yogurt for a light and healthy twist.


Ingredients

  • 100g of cookies (Mary type)
  • 60g of unsalted butter
  • 15g of white sugar
  • 200g of cream cheese (Philly style)
  • 250g whipping liquid cream
  • 100g of unsweetened Greek yogurt

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Crush the cookies and mix them with melted butter and sugar. Press the mixture into the bottom of a cheesecake pan to form the base.
  3. Bake the base for about 10 minutes, then remove and let it cool.
  4. In a bowl, beat the cream cheese until smooth.
  5. Add the Greek yogurt and mix until combined.
  6. In another bowl, whip the cream until soft peaks form, then fold it into the cream cheese mixture.
  7. Pour the filling onto the cooled cookie base and smooth it out.
  8. Refrigerate for at least 240 minutes or until set.
  9. Serve chilled, optionally topped with blackberry compote.

Notes

Ensure cream cheese is at room temperature for easy mixing. For added flavor, consider vanilla extract. You can use different fruits like raspberries or strawberries.
