- 2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 24 oz (680g) cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 tablespoon yellow food coloring
- 1/2 cup white chocolate chips, melted
- 1 cup white chocolate chips, melted (for topping)
- Yellow food coloring (for topping)
- Yellow sprinkles
Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- Combine graham cracker crumbs and melted butter, then press into the bottom of the pan. Bake for 10 minutes and let cool.
- In a large bowl, beat cream cheese until smooth. Add sugar, sour cream, and vanilla; mix well. Add eggs one at a time, mixing after each addition. Stir in yellow food coloring and melted white chocolate.
- Pour cheesecake batter over cooled crust and bake for 60-70 minutes until set. Turn off oven and leave cheesecake inside for 1 hour to cool slowly.
- Refrigerate for at least 4 hours or overnight to set completely.
- Melt white chocolate chips for topping and mix with yellow food coloring. Drizzle over cooled cheesecake, then sprinkle with yellow sprinkles.
- Chill until topping sets.
Notes
Make sure cream cheese is at room temperature for a smooth batter. Avoid overbaking; the cheesecake should have a slight jiggle in the center when done.
