- 1 cup unsalted butter, softened
- 1 1/2 cups sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp almond extract
- 1 tsp vanilla extract
- 1 cup chopped dried apricots
- 1 cup chopped dried pineapple
- 1 cup chopped candied ginger
- 1 cup slivered almonds
- 1 cup chopped walnuts
- 1/2 cup milk
- 1/2 cup white chocolate chips (optional)
Instructions
- Preheat your oven to 325°F (163°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a large bowl, cream the softened butter and sugar together until light and fluffy, about 4-5 minutes.
- Add the eggs one at a time, fully incorporating each before adding the next.
- Stir in the almond and vanilla extracts.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, alternating with the milk. Mix until just combined.
- Gently fold in the chopped dried fruits, slivered almonds, chopped walnuts, and white chocolate chips if using.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean. Cover with foil if browning too quickly.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
