- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 12 oz white chocolate, chopped
- 3 (8 oz) packages cream cheese, softened
- 3/4 cup granulated sugar
- 2 tsp vanilla extract
- 3 large eggs
- 1 cup heavy cream
- 2 cups fresh strawberries, hulled and sliced
- 2 tbsp powdered sugar (for strawberries)
Instructions
- Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan, lining the bottom with parchment paper.
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the prepared pan.
- Bake the crust for 10 minutes and set aside to cool.
- Melt the white chocolate in a heatproof bowl in the microwave in 30-second intervals, stirring until smooth.
- In a large mixing bowl, beat cream cheese and sugar until smooth. Add melted white chocolate and vanilla extract, mixing until combined.
- Add eggs one at a time, beating well after each addition. Mix in heavy cream until smooth.
- Pour the cheesecake filling into the crust and smooth the top. Bake for 50-60 minutes until the center is set but slightly jiggly.
- Let cool, then refrigerate for at least 4 hours.
- Before serving, toss the sliced strawberries with powdered sugar and arrange them on top of the cheesecake.
Notes
Make sure your cream cheese is at room temperature for a smooth filling. Do not skip the chilling time; it helps the cheesecake set properly.
