- 1 1/2 cups graham cracker crumbs
- 1 1/2 cups cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup fresh raspberries, mashed
- 1/2 cup white chocolate chips, melted
- 1 cup white chocolate chips, melted (for coating)
- 1/4 cup freeze-dried raspberries, crushed
Instructions
- In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
- Gently fold in the graham cracker crumbs and mashed fresh raspberries until well combined. Chill the mixture in the fridge for 30 minutes.
- Scoop about a tablespoon of the cheesecake mixture and roll it into a ball. Place on a parchment-lined tray and repeat until all the mixture is used. Chill in the fridge for 1 hour.
- Melt 1 cup of white chocolate chips in a microwave-safe bowl. Dip each cheesecake ball into the melted white chocolate, returning to the tray afterward.
- While the coating is soft, sprinkle crushed freeze-dried raspberries over the top.
- Chill again for at least 30 minutes before serving.
Notes
Serve chilled. Pairs well with vanilla ice cream or a drizzle of chocolate sauce.
