White Chocolate Raspberry Cheesecake Balls

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 cups cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh raspberries, mashed
  • 1/2 cup white chocolate chips, melted
  • 1 cup white chocolate chips, melted (for coating)
  • 1/4 cup freeze-dried raspberries, crushed

Instructions

  1. In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  2. Gently fold in the graham cracker crumbs and mashed fresh raspberries until well combined. Chill the mixture in the fridge for 30 minutes.
  3. Scoop about a tablespoon of the cheesecake mixture and roll it into a ball. Place on a parchment-lined tray and repeat until all the mixture is used. Chill in the fridge for 1 hour.
  4. Melt 1 cup of white chocolate chips in a microwave-safe bowl. Dip each cheesecake ball into the melted white chocolate, returning to the tray afterward.
  5. While the coating is soft, sprinkle crushed freeze-dried raspberries over the top.
  6. Chill again for at least 30 minutes before serving.

Notes

Serve chilled. Pairs well with vanilla ice cream or a drizzle of chocolate sauce.
