- 1 1/2 cups graham cracker crumbs
- 1 1/2 cups cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup fresh raspberries, mashed
- 1/2 cup white chocolate chips, melted
- 1 cup white chocolate chips, melted (for coating)
- 1/4 cup freeze-dried raspberries, crushed
Instructions
- In a large mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Gently fold in graham cracker crumbs and mashed raspberries. Chill the mixture in the fridge for 30 minutes.
- Scoop about a tablespoon of the mixture and roll it into balls. Place the balls on a parchment-lined tray and chill for 1 hour.
- Melt the white chocolate chips for coating in intervals, stirring until smooth.
- Dip each cheesecake ball in the melted white chocolate and sprinkle with crushed freeze-dried raspberries.
- Chill the coated balls for at least 30 minutes before serving.
Notes
Store any leftovers in an airtight container in the refrigerator for up to a week. For longer storage, freeze before coating in chocolate.
