Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 cups cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh raspberries, mashed
  • 1/2 cup white chocolate chips, melted
  • 1 cup white chocolate chips, melted (for coating)
  • 1/4 cup freeze-dried raspberries, crushed

Instructions

  1. In a large mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Gently fold in graham cracker crumbs and mashed raspberries. Chill the mixture in the fridge for 30 minutes.
  3. Scoop about a tablespoon of the mixture and roll it into balls. Place the balls on a parchment-lined tray and chill for 1 hour.
  4. Melt the white chocolate chips for coating in intervals, stirring until smooth.
  5. Dip each cheesecake ball in the melted white chocolate and sprinkle with crushed freeze-dried raspberries.
  6. Chill the coated balls for at least 30 minutes before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to a week. For longer storage, freeze before coating in chocolate.
