Description
A rich and creamy cheesecake featuring a crunchy Oreo crust and a swirl of raspberry sauce, perfect for celebrations or a cozy night in.
Ingredients
Scale
- 2 cups fresh or frozen raspberries
- 1/4–1/2 cup granulated sugar
- 3 tbsp water (divided)
- 1 tbsp cornstarch
- 25–30 Oreo cookies (about 2 1/2–3 cups crushed)
- 5 tbsp unsalted butter, melted
- 8 oz high-quality white chocolate (bars or chips)
- 4 (8 oz) blocks full-fat cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 2 egg yolks
- 1/2 cup sour cream
- 1 tbsp cornstarch
- 1 tsp vanilla extract
Instructions
- Make the Raspberry Sauce: Combine raspberries, sugar, and 2 tablespoons of water in a saucepan. Cook over medium heat, mashing the berries as they heat. Dissolve cornstarch in the remaining water and add it to the saucepan. Bring to a boil and cook until thickened. Strain the mixture and let it cool.
- Prepare the Oreo Crust: Preheat your oven to 350°F (175°C). Crush the Oreo cookies and mix them with melted butter. Press this mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let it cool.
- Make the Cheesecake Filling: Melt the white chocolate in intervals, then let it cool slightly. In a large bowl, beat the softened cream cheese and sugar until smooth. Add the eggs, sour cream, cornstarch, vanilla, and the melted white chocolate, mixing until well combined.
- Assemble the Cheesecake: Pour half of the cheesecake batter over the cooled crust. Swirl in some raspberry sauce. Carefully pour the remaining batter and repeat the swirl with more raspberry sauce.
- Bake the Cheesecake: Place the cheesecake in a water bath and bake at 350°F for 10 minutes. Then lower the temperature to 300°F and bake for an additional 60-70 minutes. Allow the cheesecake to cool in the oven for 60 minutes. Afterward, chill it in the refrigerator for 6-8 hours.
- Finish and Serve: Carefully remove the cheesecake from the pan. Top with more raspberry sauce before serving.
Notes
Use high-quality white chocolate for the best flavor. Ensure cream cheese is softened for smooth mixing. Don’t skip the water bath; it helps prevent cracks in the cheesecake.
