  • 8 oz high-quality white chocolate (bars or chips)
  • 4 (8 oz) blocks full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 egg yolks
  • 1/2 cup sour cream
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract

Instructions

  1. Make the Raspberry Sauce: Combine raspberries, sugar, and 2 tablespoons of water in a saucepan. Cook over medium heat, mashing the berries as they heat. Dissolve cornstarch in the remaining water and add it to the saucepan. Bring to a boil and cook until thickened. Strain the mixture and let it cool.
  2. Prepare the Oreo Crust: Preheat your oven to 350°F (175°C). Crush the Oreo cookies and mix them with melted butter. Press this mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let it cool.
  3. Make the Cheesecake Filling: Melt the white chocolate in intervals, then let it cool slightly. In a large bowl, beat the softened cream cheese and sugar until smooth. Add the eggs, sour cream, cornstarch, vanilla, and the melted white chocolate, mixing until well combined.
  4. Assemble the Cheesecake: Pour half of the cheesecake batter over the cooled crust. Swirl in some raspberry sauce. Carefully pour the remaining batter and repeat the swirl with more raspberry sauce.
  5. Bake the Cheesecake: Place the cheesecake in a water bath and bake at 350°F for 10 minutes. Then lower the temperature to 300°F and bake for an additional 60-70 minutes. Allow the cheesecake to cool in the oven for 60 minutes. Afterward, chill it in the refrigerator for 6-8 hours.
  6. Finish and Serve: Carefully remove the cheesecake from the pan. Top with more raspberry sauce before serving.
