  • 1 cup brown sugar

  • 1/2 cup sugar

Instructions

  1. Prepare the Crust: In a bowl, mix melted butter with graham cracker crumbs until fully combined. Spray a 9-inch springform pan with nonstick baking spray and press the crust mixture into the bottom and up the sides. Place the crust in the fridge to firm up while you prepare the filling.
  2. Prepare the Filling: Preheat the oven to 325°F (163°C). Melt the white chocolate using a double boiler or in short bursts in the microwave. Stir until smooth. In a large bowl, whip the cream cheese until fluffy. Add sour cream and melted white chocolate, mixing until smooth. Beat in the eggs, egg yolk, sugar, brown sugar, and vanilla extract until creamy and well combined.
  3. Assemble the Cheesecake: Pour the cream cheese filling into the prepared crust. Drizzle 1/2 cup of caramel sauce on top and gently swirl it with a knife. Sprinkle chopped macadamia nuts around the edges of the cheesecake.
