A rich and creamy cheesecake topped with smooth white chocolate ganache, perfect for celebrations and special occasions.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 12 oz white chocolate, chopped
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup heavy cream
- 8 oz white chocolate, chopped
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a greased 9-inch springform pan and bake for 10 minutes. Let cool.
- Melt white chocolate in a microwave-safe bowl in 20-second intervals until smooth. Set aside to cool slightly.
- Beat cream cheese and sugar in a large bowl until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and heavy cream. Fold in melted white chocolate.
- Pour the cheesecake mixture over the cooled crust and smooth the top. Reduce oven temperature to 325°F (160°C) and bake for 55-60 minutes until set. Let cool in the oven with the door slightly open for 1 hour.
- Chill in the refrigerator for at least 4 hours or overnight.
- Heat heavy cream in a small saucepan until simmering. Pour over chopped white chocolate and stir until smooth. Let ganache cool slightly, then pour over the chilled cheesecake.
- Once set, slice and serve with white chocolate curls or fresh berries.
Notes
Ensure cream cheese is softened for easier mixing. Melting chocolate slowly prevents burning. Chill the cheesecake completely before adding ganache.
