Delicious dessert bars blending creamy cheesecake and tart fresh cranberries, topped with a sweet white chocolate drizzle.

- 12 Golden Oreos
- 3 tbsp unsalted butter, melted
- 8 oz cream cheese, room temperature
- 1/3 cup sour cream
- 1/3 cup granulated sugar
- 1/2 tsp vanilla bean paste or extract
- 1 egg
- 1/2 cup white chocolate chips
- 2 cups fresh cranberries
- 1/3 cup granulated sugar (for topping cranberries)
- 1/3 cup water
- 1 1/2 cups granulated sugar (for coating cranberries)
- 3/4 cup white chocolate chips (for drizzling)
Instructions
- Preheat the oven to 350°F (175°C). Pulse the Golden Oreos in a food processor until they turn into crumbs. Drizzle the melted butter into the crumbs and pulse again to combine. Press this mixture into the bottom of a 9×9-inch baking pan lined with foil or parchment paper. Bake for 5 minutes, then set it aside.
- In the food processor, blend the cream cheese, sour cream, granulated sugar, vanilla, and egg until smooth. Add the 1/2 cup of white chocolate chips and pulse to mix.
- Pour the cheesecake mixture over the crust and bake for 35 minutes. The filling should be set but slightly jiggly. Let it cool on a wire rack for about 1 hour, then cover and refrigerate for at least 3 hours or overnight.
- To make sugared cranberries, mix 1/3 cup of sugar and 1/3 cup of water in a pan over medium heat. Whisk until dissolved. Remove from heat and add the cranberries to coat. Transfer them onto a wire rack and let dry for 1 hour.
- Put the remaining 1 1/2 cups of sugar in a shallow dish. Roll the cranberries in batches to coat them in sugar. Let dry for another hour.
- Cut the cheesecake into 9 squares. Melt the remaining 3/4 cup of white chocolate and drizzle over each slice. Top with sugared cranberries.
Notes
Ensure cream cheese is at room temperature for a smooth filling. Store leftovers in an airtight container in the fridge for up to a week.
