White Chocolate Cranberry Cheesecake Bars

Description

Delicious dessert bars blending creamy cheesecake and tart fresh cranberries, topped with a sweet white chocolate drizzle.


Ingredients

  • 12 Golden Oreos
  • 3 tbsp unsalted butter, melted
  • 8 oz cream cheese, room temperature
  • 1/3 cup sour cream
  • 1/3 cup granulated sugar
  • 1/2 tsp vanilla bean paste or extract
  • 1 egg
  • 1/2 cup white chocolate chips
  • 2 cups fresh cranberries
  • 1/3 cup granulated sugar (for topping cranberries)
  • 1/3 cup water
  • 1 1/2 cups granulated sugar (for coating cranberries)
  • 3/4 cup white chocolate chips (for drizzling)

Instructions

  1. Preheat the oven to 350°F (175°C). Pulse the Golden Oreos in a food processor until they turn into crumbs. Drizzle the melted butter into the crumbs and pulse again to combine. Press this mixture into the bottom of a 9×9-inch baking pan lined with foil or parchment paper. Bake for 5 minutes, then set it aside.
  2. In the food processor, blend the cream cheese, sour cream, granulated sugar, vanilla, and egg until smooth. Add the 1/2 cup of white chocolate chips and pulse to mix.
  3. Pour the cheesecake mixture over the crust and bake for 35 minutes. The filling should be set but slightly jiggly. Let it cool on a wire rack for about 1 hour, then cover and refrigerate for at least 3 hours or overnight.
  4. To make sugared cranberries, mix 1/3 cup of sugar and 1/3 cup of water in a pan over medium heat. Whisk until dissolved. Remove from heat and add the cranberries to coat. Transfer them onto a wire rack and let dry for 1 hour.
  5. Put the remaining 1 1/2 cups of sugar in a shallow dish. Roll the cranberries in batches to coat them in sugar. Let dry for another hour.
  6. Cut the cheesecake into 9 squares. Melt the remaining 3/4 cup of white chocolate and drizzle over each slice. Top with sugared cranberries.

Notes

Ensure cream cheese is at room temperature for a smooth filling. Store leftovers in an airtight container in the fridge for up to a week.
