- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 500g (2 1/2 cups) cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 8 oz (225g) white chocolate, melted
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1/2 cup whipped cream
- White chocolate shavings or curls for garnish
Instructions
- Preheat the oven to 325°F (165°C) and grease a 9-inch springform pan.
- Mix graham cracker crumbs, sugar, and melted butter in a bowl and press into the pan to form a crust.
- Bake for 8-10 minutes, then set aside to cool.
- In a large bowl, beat cream cheese and powdered sugar until smooth. Add vanilla extract and melted white chocolate.
- Mix in the eggs, one at a time, then stir in sour cream and heavy cream until smooth.
- Pour the cheesecake mixture over the cooled crust and smooth the top.
- Bake for 50-60 minutes or until the center is set but slightly jiggly, then cool in the oven for 1 hour.
- Let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, top with whipped cream and garnish with white chocolate shavings.
Notes
Store leftovers in the refrigerator for up to 5 days or freeze for longer storage.
