- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup white chocolate, chopped
- 4 (8-ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup fresh blueberries
- 1/4 cup sour cream
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
- Melt the white chocolate in a microwave or double boiler. Allow it to cool slightly.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and mix well.
- Add the melted white chocolate and vanilla extract, and mix until combined.
- Add the eggs one at a time, mixing well after each addition.
- Gently fold in the blueberries and sour cream.
- Pour the cheesecake batter over the crust in the prepared pan.
- Bake for 55-60 minutes or until the center is set but slightly jiggly.
- Turn off the oven and leave the cheesecake in the oven for 1 hour.
- Remove from the oven and cool completely on a wire rack before refrigerating for at least 4 hours or overnight.
- Serve chilled and enjoy!
Notes
Ensure cream cheese is softened to avoid lumps. Use frozen blueberries if fresh are unavailable, but thaw and drain them first.
