- 8 oz feta cheese
- 1/3 cup Greek yogurt or cream cheese
- 1 tbsp olive oil
- 1 small garlic clove (optional)
- 1 cup cherry tomatoes
- 1/2 cup chickpeas (cooked or canned)
- 1 tbsp olive oil (plus extra for drizzling)
- 1/4 tsp smoked paprika
- Salt & black pepper, to taste
- Chopped fresh parsley or oregano
- Pita or flatbread, for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Toss cherry tomatoes with olive oil, salt, and pepper. Roast for 15–20 minutes until blistered.
- In a food processor, blend feta, yogurt, olive oil, and garlic (if using) until smooth and creamy.
- Spread whipped feta into a shallow bowl. Top with roasted tomatoes and chickpeas.
- Drizzle with olive oil, sprinkle paprika, and herbs.
- Enjoy immediately with warm pita or flatbread.
Notes
Use high-quality feta for the best flavor. Experiment with different herbs to customize the taste.
