A delicious and easy appetizer that combines creamy whipped feta cheese with sweet roasted cherry tomatoes and hearty chickpeas.


Ingredients

  • 8 oz feta cheese
  • 1/3 cup Greek yogurt or cream cheese
  • 1 tbsp olive oil
  • 1 small garlic clove (optional)
  • 1 cup cherry tomatoes
  • 1/2 cup chickpeas (cooked or canned)
  • 1 tbsp olive oil (plus extra for drizzling)
  • 1/4 tsp smoked paprika
  • Salt & black pepper, to taste
  • Chopped fresh parsley or oregano
  • Pita or flatbread, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss cherry tomatoes with olive oil, salt, and pepper. Roast for 15–20 minutes until blistered.
  3. In a food processor, blend feta, yogurt, olive oil, and garlic (if using) until smooth and creamy.
  4. Spread whipped feta into a shallow bowl. Top with roasted tomatoes and chickpeas.
  5. Drizzle with olive oil, sprinkle paprika, and herbs.
  6. Enjoy immediately with warm pita or flatbread.

Notes

Use high-quality feta for the best flavor. Experiment with different herbs to customize the taste.
