Ingredients

- 8 oz (225g) block feta cheese (not crumbled)
- 3 tbsp Greek yogurt or sour cream
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 cucumber, diced
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In a food processor, combine the feta cheese, Greek yogurt or sour cream, olive oil, lemon juice, and lemon zest. Blend until smooth and creamy.
- In a mixing bowl, combine the diced cucumber with salt and pepper to taste.
- Serve the whipped feta dip with the cucumber salad on the side, and garnish with fresh herbs if desired.
Notes
Serve with pita chips, crunchy toast, or fresh vegetables. Store leftovers in an airtight container for 3-4 days.
