A light and refreshing salad featuring sweet watermelon, tangy feta, and crunchy walnuts, perfect for summer gatherings.
Ingredients

- 4 cups seedless watermelon, cubed
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/3 cup toasted walnut halves
- 1 tbsp fresh parsley, chopped (plus extra for garnish)
- 1 tbsp olive oil
- 1 tsp balsamic vinegar or lemon juice (optional)
- Salt & cracked black pepper, to taste
Instructions
- Cube the watermelon and thinly slice the red onion. Toast the walnuts if not already toasted.
- In a large bowl, gently toss together the watermelon, feta, red onion, and walnuts.
- Drizzle the mixture with olive oil and balsamic vinegar (or lemon juice). Sprinkle with salt and pepper to taste.
- Top the salad with fresh parsley and serve chilled.
Notes
For best flavor, serve chilled. Store leftovers in an airtight container and consume within 1-2 days.
