Description

A light and refreshing salad featuring sweet watermelon, tangy feta, and crunchy walnuts, perfect for summer gatherings.


Ingredients

Scale
  • 4 cups seedless watermelon, cubed
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup toasted walnut halves
  • 1 tbsp fresh parsley, chopped (plus extra for garnish)
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar or lemon juice (optional)
  • Salt & cracked black pepper, to taste

Instructions

  1. Cube the watermelon and thinly slice the red onion. Toast the walnuts if not already toasted.
  2. In a large bowl, gently toss together the watermelon, feta, red onion, and walnuts.
  3. Drizzle the mixture with olive oil and balsamic vinegar (or lemon juice). Sprinkle with salt and pepper to taste.
  4. Top the salad with fresh parsley and serve chilled.

Notes

For best flavor, serve chilled. Store leftovers in an airtight container and consume within 1-2 days.
