Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 1 cup cooked lentils (green or brown)
- 2 cups fresh spinach leaves
- 2 tbsp olive oil
- 1 tsp ground cumin
- Salt and pepper to taste
- 1/4 cup crumbled feta (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the sweet potatoes with 1 tablespoon of olive oil, cumin, salt, and pepper.
- Spread on a baking sheet and roast for 25-30 minutes until tender.
- In a large bowl, combine cooked lentils, spinach, roasted sweet potatoes, and remaining olive oil.
- Toss gently and add feta if desired. Serve warm.
Notes
Cut the sweet potatoes into uniform cubes for even roasting. Add garlic or lemon juice for more flavor.
