Description

A nutritious and flavorful salad featuring roasted sweet potatoes, tender spinach, and hearty lentils, perfect for lunch or dinner.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup cooked lentils (green or brown)
  • 2 cups fresh spinach leaves
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1/4 cup crumbled feta (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potatoes with 1 tablespoon of olive oil, cumin, salt, and pepper.
  3. Spread on a baking sheet and roast for 25-30 minutes until tender.
  4. In a large bowl, combine cooked lentils, spinach, roasted sweet potatoes, and remaining olive oil.
  5. Toss gently and add feta if desired. Serve warm.

Notes

Cut the sweet potatoes into uniform cubes for even roasting. Add garlic or lemon juice for more flavor.
