- 200g chocolate cookie crumbs
- 100g unsalted butter
- 500g cream cheese
- 150g sugar
- 200ml heavy cream
- 100ml caramel sauce
- 2 tbsp instant coffee
- 1 tsp vanilla extract
- Pinch of salt
- Coffee beans for garnish
Instructions
- Mix the chocolate cookie crumbs with melted butter in a bowl. Press into a springform pan to form the crust.
- Chill the crust in the refrigerator for 30 minutes to set.
- In a mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
- Dissolve the instant coffee in a tablespoon of hot water, then mix into the cream cheese mixture.
- Add heavy cream, caramel sauce, and vanilla extract to the mixture. Blend until combined.
- Pour the cheesecake mixture over the prepared crust in the springform pan. Refrigerate for 6 hours or overnight to set.
- Before serving, garnish with coffee beans and a dusting of coffee powder.
