Ingredients

  • 200g chocolate cookie crumbs
  • 100g unsalted butter
  • 500g cream cheese
  • 150g sugar
  • 200ml heavy cream
  • 100ml caramel sauce
  • 2 tbsp instant coffee
  • 1 tsp vanilla extract
  • Pinch of salt
  • Coffee beans for garnish

Instructions

  1. Mix the chocolate cookie crumbs with melted butter in a bowl. Press into a springform pan to form the crust.
  2. Chill the crust in the refrigerator for 30 minutes to set.
  3. In a mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
  4. Dissolve the instant coffee in a tablespoon of hot water, then mix into the cream cheese mixture.
  5. Add heavy cream, caramel sauce, and vanilla extract to the mixture. Blend until combined.
  6. Pour the cheesecake mixture over the prepared crust in the springform pan. Refrigerate for 6 hours or overnight to set.
  7. Before serving, garnish with coffee beans and a dusting of coffee powder.

For best results, use room temperature cream cheese and high-quality caramel sauce.
