- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 3/4 cup whole milk
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 3/4 cup boiling water
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract for cream filling
- 1/2 cup unsweetened cocoa powder for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract to the dry ingredients and mix until combined.
- Gradually add the boiling water, mixing until the batter is smooth.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the cream filling, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract together until smooth and thick.
- Once the cakes are cool, spread half of the cream filling on top of one cake layer. Place the second layer on top and spread the remaining filling over it.
- Sprinkle the top and sides of the cake generously with cocoa powder.
- Refrigerate the cake for at least 1 hour before serving to set the cream.
