Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 3/4 cup whole milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 3/4 cup boiling water
  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract for cream filling
  • 1/2 cup unsweetened cocoa powder for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients and mix until combined.
  4. Gradually add the boiling water, mixing until the batter is smooth.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the cream filling, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract together until smooth and thick.
  9. Once the cakes are cool, spread half of the cream filling on top of one cake layer. Place the second layer on top and spread the remaining filling over it.
  10. Sprinkle the top and sides of the cake generously with cocoa powder.
  11. Refrigerate the cake for at least 1 hour before serving to set the cream.
