- 1 1/2 cups graham cracker crumbs
- 1/4 cup butter, melted
- 2 tbsp granulated sugar
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1/2 cup strawberry puree
- 1 tsp vanilla extract
- 2 tbsp all-purpose flour
- 1 cup fresh strawberries, sliced
- 2 tbsp granulated sugar
Instructions
- Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar for the crust until combined. Press into the bottom of the pan and bake for 8-10 minutes. Let it cool.
- In another bowl, beat cream cheese and sugar for the filling until smooth. Add the eggs one at a time, mixing well after each addition.
- Stir in sour cream, strawberry puree, vanilla, and flour until fully combined.
- Pour the batter over the cooled crust and bake for 55-60 minutes, or until the center is set but still slightly jiggly. Allow it to cool completely.
- Toss sliced strawberries with sugar for the topping and chill them in the fridge.
- Once the cheesecake is cooled, top it with the fresh strawberry mixture before serving.
Notes
Make sure your cream cheese is softened before mixing. Don’t overmix the batter to avoid incorporating too much air, which can lead to cracks. Let the cheesecake cool completely to improve its texture before slicing.
