- 1 cup heavy whipping cream, chilled
- 8 oz cream cheese, softened
- 1/3 cup powdered sugar
- 2 tbsp lemon juice
- Zest of 1 lemon

Instructions
- Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
- In a bowl, whisk together the flour, baking powder, and baking soda.
- In a separate large bowl, beat the eggs and sugar until thick and pale. Add vegetable oil, lemon juice, lemon zest, and vanilla extract, mixing until combined.
- Gently fold in the dry ingredients until smooth.
- Pour the batter into the prepared pan and spread it evenly. Bake for 10-12 minutes or until the top springs back when lightly touched.
- While the cake is still warm, invert it onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.
- Roll the cake up tightly with the towel, starting from the short end. Let it cool completely.
- In a mixing bowl, beat the cream cheese, powdered sugar, lemon juice, and lemon zest until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Unroll the cooled cake and spread the lemon cream filling evenly over the surface. Re-roll the cake without the towel.
- Dust the cake roll with powdered sugar and decorate with lemon slices or zest. Refrigerate for at least 1 hour before slicing and serving.
