Description

A rich chocolate cake with sweet bursts of fresh cherries, perfect for any celebration.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, softened
  • 1 cup fresh cherries, pitted and chopped
  • 1/4 cup heavy cream
  • 2 tablespoons dark chocolate chips
  • 1/2 cup powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients into the butter mixture, alternating with buttermilk. Mix until just combined.
  6. Gently fold in the chopped cherries and dark chocolate chips.
  7. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Once cooled, whip the heavy cream until stiff peaks form, then fold in the powdered sugar.
  9. Spread a layer of whipped cream frosting on top of one cake layer and place the second layer on top. Frost the top and sides with the remaining frosting.
  10. Garnish with extra cherries and chocolate shavings as desired.

Notes

Use fresh cherries for the best flavor. For variations, try adding chocolate ganache between layers or switching cherries with raspberries.
