A rich chocolate cake with sweet bursts of fresh cherries, perfect for any celebration.

- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1/2 cup unsalted butter, softened
- 1 cup fresh cherries, pitted and chopped
- 1/4 cup heavy cream
- 2 tablespoons dark chocolate chips
- 1/2 cup powdered sugar (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, cream the softened butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients into the butter mixture, alternating with buttermilk. Mix until just combined.
- Gently fold in the chopped cherries and dark chocolate chips.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Once cooled, whip the heavy cream until stiff peaks form, then fold in the powdered sugar.
- Spread a layer of whipped cream frosting on top of one cake layer and place the second layer on top. Frost the top and sides with the remaining frosting.
- Garnish with extra cherries and chocolate shavings as desired.
Notes
Use fresh cherries for the best flavor. For variations, try adding chocolate ganache between layers or switching cherries with raspberries.
